March Subject: From Milk to Aging: What Proteins Teach Us About Health
Scientists often need to study thousands of proteins at once…in cells, tissues, and
even milk. Mass spectrometry–based proteomics is the powerful tool that makes
this possible. In this installment of OSU Research on Tap, VPR Sewell will talk with
Dr. Aryal about how his team applies proteomics to better understand how cells
function—both under normal conditions and when they are stressed. Because
proteins are essential to keeping our cells working properly, changes in their levels
or behavior—whether due to aging, diet, or environmental factors—can affect how
our bodies respond to stress and maintain overall health. Dr. Aryal’s research on
cellular aging and age‑related diseases will illustrate how modern proteomics is
uncovering new perspectives on health and disease.
